Out Of The Box: Build A Better PB&J
Like most parents, we love a good bagged lunch. But sometimes even our favorite recipes can start to taste a bit stale. With our new series, Out Of The Box, we're here to help revamp your child's lunchtime, one eco-friendly lunchbox at a time.
First of all, let's start with the container. Sure, a brown paper bag works pretty well, but you know what's even better? A stainless steal, super-sleek, eco-friendly lunchbox. This Eco Lunch Box is a three-in-one, dishwasher safe way to pack a sandwich and two side dishes.
Next, let's figure out what's inside. Since we still love a good PB&J, we decided to take the ultimate favorite sandwich and give it a little tweak. Instead of using grocery store bread, pick up some organic slices from Bread Alone, a wonderful little bakery based in the Catskills. We love the Organic Wheat and the Mixed Grain.
Finally, we've picked a few spreads to fill out the sammie. Frog Hollow has amazing jams and preserves, but we think their Apricot Conserve would be just different enough to perk up your child's tastebuds. And instead of the fatty peanut butter, grab a jar of Justin's Honey Almond Butter. Not only is it healthier, it's also has a hint of sweetness, which makes even this wholesome lunch feel like a treat.
Finish it all off with a side of fresh fruit and a carton of milk. Chances are, with a sandwich this stacked, they won't even miss dessert.
